If I use a store-bought can of cherry pie filling for baking tarts, is this non-potentially hazardous?  It's not fresh fruit.  I realize pumpkin pie is considered "custard" and is not allowed to be sold under SB81.

My feeling is that store-bought cherry filling would probably test non-potentially hazardous.  Fruit pies are non-potentially hazardous.  There's no dairy in it, and it's full of sugar.  I would not have a problem using it in my business.

Thanks Kelley!  If the pH is less than 4 in the baked filling then it should be non-potentially hazardous, right?  (I know you can't say legally but I'm trying to wrap my head around this)
